Just because it’s low-carb, doesn’t mean it still can’t taste delicious. Enjoy this keto chocolate cake recipe. It is perfect for any occasion!
Cake
• 1 1/2 cups coconut flour
• 1/4 cup cocoa powder
• 2 tbsp dutch cocoa
• 2 1/4 tsp baking powder
• 1/2 tsp kosher salt
• 1/3 cup water
• 3 eggs
• 1/3 cup swerve
• 1 1/2 tsp vanilla extract
Icing
• 1/2 cup cocoa powder
• 2 oz melted dark chocolate
• 8 oz cream cheese
• 1/4 cup ghee
• 2 cups swerve
• 1 1/2 tsp vanilla extract
• 3 tbsp almond milk
What you’ll do:
1. Preheat the oven to 350 F.
2. Combine all ingredients for the cake and mix together.
3. Spread ingredients evenly into an 8-inch nonstick baking pan.
4. Bake for 15 minutes. For optimal baking, place the pan on the center rack.
5. Let cool for 30 minutes.
6. While the cake is cooling, it’s time to make the icing.
7. Allow the cream cheese and ghee to soften. Combine cream cheese, ghee and remaining ingredients together. Use a mixer to beat together.
8. Apply the icing to the cake and enjoy!
