Yvette’s Zucchini Cheese Pizza

Swap the crust of your favorite home made pizza for a gluten-free zucchini crust.

Yvette knows a thing or two about major weight loss. She underwent bariatric surgery in 2017 and today she’s an influential member of the Augusta University Health Weight loss Support Group, helping others reach their own weight loss goals. Some of her favorite things to share with the group are recipes she’s found and adapted into healthier versions. Like this one from Delish:

Zucchini Cheese Pizza

What you’ll need:

  • 3 medium zucchini, or about 4 cups grated zucchini
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1/2 tsp. dried oregano
  • 3 cup shredded mozzarella, divided into 1 cup and 2 cups
  • 1/2 cup freshly grated parmesan
  • 1/4 cup cornstarch
  • Kosher salt
  • Freshly ground black pepper
  • Pizza sauce and your choice of toppings: Tip: Don’t forget to read the nutrition labels. Canned and jarred sauces can contain high sodium and sugar levels. Choose fresh toppings like tomatoes, onions, spinach, mushrooms and fresh basil.

What you’ll do:

  1. Preheat oven to 425 degrees and line a baking sheet with parchment.
  2. On a box grater or in a food processor, grate the zucchini. Using cheesecloth or a dish towel, wring excess moisture out of zucchini. Don’t skip this step! This is important to make sure your pizza isn’t soggy.
  3. Transfer zucchini to a large bowl with eggs, garlic, oregano, 1 cup of mozzarella, parmesan and cornstarch, and season with salt and pepper. Stir until completely combined.
  4. Transfer “dough” to the prepared baking sheet and pat evenly into a crust.
  5. Bake until golden and dried out for 25 minutes.
  6. Remove and top with pizza sauce, remaining 2 cups mozzarella and your choice of toppings.
  7. Return to oven and bake until cheese is melted, 8 to 10 minutes more.
  8. Slice, serve and enjoy!
