Need a delicious side but don’t have a lot of time? This three-step green bean dish is here to save the day. Use the salt for the water but it won’t need to touch the dish. Superfoods, garlic and ginger, add a lot of flavors while also being great sources of magnesium, vitamins, calcium and selenium.
What you’ll need:
- 2 pounds whole green beans
- 6 tbs extra-virgin olive oil
- 2 garlic cloves
- 1/2 tsp ground ginger
- 1 tsp crushed red pepper
- Salt to taste
- Ice water
What you’ll do:
- Boil the beans in a large pot of salted water. Cool for about 4 minutes, until crisp-tender. Drain and transfer the beans to a bowl of ice water to cool. Drain and pat dry.
- While the beans are boiling, heat the olive oil in a large skillet. Thinly slice the garlic and cook over moderate heat for about 30 seconds. Add the ginger and red pepper, stir.
- Add the beans to the spice-oil mixture. Stir-fry until the beans are tender for about 2 to 3 minutes.
- Serve and enjoy!
